This simple cucumber and yogurt salad is a cooling counterpoint to hot Indian spices. Makes 8 servings.
1 1/4 cups whole milk plain yogurt
2 grams kief or finely ground dry style hash
3/4 teaspoon curry power
2 medium cucumbers, peeled and diced
1/4 cup finely chopped cilantro
Salt and pepper to taste
In a medium bowl, stir together the yogurt, kief (or hash) and curry powder until well combined. Stir in cucumber and cilantro and season with salt and pepper. Stir until well combined. Chill for at least 1 hour and up to 24 hours before serving.
